The Gelateria Pasticceria Recupero is the best ice cream shop in Palermo.  I try gelato in just about every city I visit in Italy and this is among the best.  There are warnings everywhere to be careful that some of the gelato is made from mixes and is not considered authentic by Italian standards.  I have no idea whether this is authentic gelato or not, all I know is that it is good.  They have a lot of different flavors to choose from including some that are pretty unique.  They also sell other bakery items that looked like they would be good.
