First off, if you plan to go to Il Duomo you will need a reservation.  Il Duomo is now one of the best restaurants in Sicily.  The restaurant is located behind the cathedral - hence the name Il Duomo.  Il Duomo has as many types of olive oil as most restaurants have of wine.  Add bread that is baked fresh daily to the olive oil and you almost don't need a main course.  The menu uses primarily local ingredients so it changes with the season.  The restaurant is not cheap, but it is worth splurging here.  The dishes are unique and not what I consider to be typical Italian but the food is excellent.
