In the summer months Zucchini is everywhere – grocery stores, farmers markets, roadside stand.
You can stuff it, make bread with it or fry it.
Here is my favorite Italian Zucchini Recipe
4 medium zucchini
1 small onion sliced
2 tablespoons olive oil
2 fresh tomatoes cut into pieces
1 teaspoon salt
1/2 teaspoon pepper
Several fresh basil leaf
Clean the zucchini and cut off both ends. Slice the zucchini into 1 inch pieces. Brown onion in olive oil in a frying pan. Add tomatoes and cook 5 minutes. Add zucchini, salt and pepper and cook gently uncovered for 20 minutes or until tender. Add basil and cook 2 minutes longer.
