Authentic Italian Meat Sauce

My favorite Italian Meat Sauce for spaghetti can be found in the AmoreTravelGuides.com blog.  It is both good and easy!  This is the entry:

My mother learned to make this authentic Italian recipe when we were living in Italy. The recipe has been perfected over the years. Since the sauce is heavy it is perfect for the winter months.

1 pound hamburger or sausage (you can use more or less, adjust the other ingredients)
1 tablespoon olive oil
1 clove garlic
1 medium onion chopped
1 28 oz (794g) can whole tomatoes
1 10 ¾ oz (305g) can tomato puree
1 6 oz (170g) can tomato paste
1 carrot chopped
2 sticks of celery chopped
Pinch of salt
Pinch of pepper
1 teaspoon chopped basil
½ cup red wine (optional)

Brown the hamburger or sausage in olive oil, stirring frequently to prevent the meat from cooking in lumps. When the hamburger is cooked through add the onion, garlic, carrot and celery. Cook until the onion, garlic, carrot and celery are soft when pierced with a fork. Add the whole tomatoes, tomato puree, tomato paste, salt and pepper. Add red wine (optional). Cover and cook for 30 minutes. Remove the cover and cook for another 30 minutes until the sauce is the thickness you prefer. Remove from heat. Add basil and stir. Let the sauce sit for a few minutes so basil can soften.

This spaghetti sauce should be served over spaghetti or a thicker pasta (not a thin pasta like angel hair pasta).

This meat sauce for spaghetti freezes well and can be re-heated in the microwave.

I did a minor variation to your recipe and used Muir Glen Fire Roasted Crushed Tomatoes for all the tomato ingredients.  Love Muir Glen Fire Roasted Tomatoes. 

Also, for those with gluten intolerance . . . Trader Joe's has really good rice pasta.  It comes fairly close to tasting like real pasta. 

Trader Joe's is my favorite grocery store.

I use the following recipe from allrecipes.com.  I especially like the 3 cups of wine!

INGREDIENTS
2 pounds lean ground beef
1 pound ground pork
2 tablespoons olive oil
2 onions, chopped
1 clove garlic, crushed
3 cups red wine
2 pounds fresh mushrooms, sliced
1/4 teaspoon dried rosemary
4 tablespoons chopped fresh oregano
1/4 teaspoon chopped fresh thyme
3 (29 ounce) cans tomato sauce
1 (6 ounce) can tomato paste
2 tablespoons grated Parmesan cheese

DIRECTIONS
In a large skillet, brown beef and pork over medium heat until no longer pink; set aside.
In a large skillet, warm olive oil over medium heat and saute onions and garlic until tender; add about 1/2 cup of wine; mix well.
Add mushrooms, rosemary, oregano and thyme to skillet and add another 1/2 cup wine; saute until tender.
Add browned meat, tomato sauce and tomato paste to mixture; simmer for 1 hour and add the remaining 2 cups of wine.
Simmer sauce on low for 2 to 3 hours, stirring occasionally; serve.

I've been meaning to prepare my own pesto at home. I got this recipe from the WWW.

    * 2 cups fresh basil leaves, packed
    * 1/4 cup grated Parmesan cheese
    * 1/2 cup Olive oil
    * 3 tablespoons pine nuts or walnuts
    * 3 garlic cloves, finely minced

Place basil leaves in small batches in food processor and whip until well chopped (do about 3/4 cup at a time). Add about 1/3 the nuts and garlic, blend again. Add about 1/3 of the Parmesan cheese; blend while slowly adding about 1/3 of the olive oil, stopping to scrape down sides of container.
Process basil pesto it forms a thick smooth paste. Repeat until all ingredients are used, mix all batches together well. Serve over pasta. Basil pesto keeps in refrigerator one week, or freeze for a few months.

I made this recipe this weekend ("con vino rosso" of course!)  You're right, its easy and delicious.   It will be a base to get creative with in the future.  Yummm!
