I realized that this forum needs a recipe for Shrimp Scampi so here is mine!
Ingredients:
1 /12 pounds jumbo shrimp (about 2 dozen). You will need to rinse,shell and devein them.
2 tablespoons butter (more if you like, I once had a friend from New Orleans whose philosophy was
the more butter the better! I dont hold to that but if you want to add a little more butter feel free
to do so)
2 tablespoons minced garlic, again if you really like garlic you can add another tablespoon
Ό cup dry white wine
2 tablespoons lemon juice, freshly squeezed is best
2 tablespoons finely chopped parsley
Salt and Pepper to taste
Dry the shrimp with a paper towel.
Heat a large skillet over medium heat. Add the butter to the heat. When the butter has melted turn the temperature up to high and add the shrimp. Let the shrimp cook for a minute on high without stirring them. After a minute add the garlic and cook until the garlic is soft, but not browned. Stir the shrimp and garlic making sure nothing burns. The shrimp should cook 3 to 4 minutes in total depending on the size of the shrimp.
Put the shrimp on a plate. Turn the heat back down to medium and return the skillet to the heat. Pour in the wine and lemon juice. Boil the liquid for about 30 seconds. Scrape the bottom of the pan so you get all the little brown bits. Toss in the parsley and salt and pepper and cook for another 30 seconds. Pour the sauce over the shrimp.
